Heilala is a family-run business that started off in 2002 as a Tongan aid project to provide employment and a sense of purpose for the local community. Now the company grows the richest grade of vanilla in the Asia Pacific region on a pristine organic plantation in Vava'u, Tonga.
What's so striking about the company is its commitment to true sustainability – vanilla is the world's second most labour-intensive crop and Heilala Vanilla does everything from the weeding and mulching to the picking, drying and curing by hand!
Heilala Vanilla is kindly giving away a tube of 3 vanilla beans, a 100ml bottle of vanilla extract and a 100ml jar of vanilla paste – worth almost $55.
Beans: These are plump, fragrant and beautifully waxy. Once you've scraped the seeds and used the bean to flavour velvety custard, make a batch of vanilla sugar by simply putting the rinsed and dried bean into a jar of sugar. Leave for a couple of weeks before adding to cakes and tarts.
Vanilla extract: 100% pure vanilla extract. Extract is what I use the most in my kitchen. I splash vanilla into almost everything I make: pancakes, scones, meringues and muffins.
Vanilla paste: I've always felt slightly dubious about vanilla paste, but I'm very excited about this award-winning one, made by adding vanilla seeds back to their vanilla extract along with a natural seaweed thickener. Perfect for when you want the seeds to show – think ice cream and crème brûlée.
